| Liverwurst is spreadable when cold and has a liver content of at least 10%. There are hundreds of different regional variations of the Liverwurst. Some are smooth, others have a coarser texture; some have a light taste, others are heavily seasoned; some are smoked; some have additional ingredients such as bacon and meat pieces. The liver content ranges from 10 - 30%. Pig's liver is most commonly used, but sometimes calve's liver will be used instead. |
