Gratinierte Birne mit Marzipan   (Pears Baked with Marzipan)

2 large Pears
4 ounces (120g) Marzipanrohmasse (Raw Marzipan at Quality Level 100:0)
4 tablespoons Honey
4 Egg Whites
2 cups frozen Mixed Berries
1 tablespoon Water
1/4 cup Heavy Whipping Cream, cold
1 teaspoon Sugar

Peel pears, slice them in half and remove cores.

In a small pot, bring some water to a boil. Place pears in a small colander, place strainer over boiling water (but not touching the water), and allow pears to be steamed.

In a second pot, combine water and mixed berries. Bring to a boil, then reduce heat. Cook gently for 5 minutes. Remove from heat and press cooked fruit through a strainer to get a thick fruit sauce. Set sauce aside.

Whip the whipping cream until firm peaks develop. While whipping, add sugar. Set aside.

Whip the egg whites until firm peaks develop. While whipping, drizzle in honey.

Stuff the center of each pear half with Marzipan. Cover each pear half with the stiff egg whites.

Place pear halves on a baking pan and broil for 2-3 minutes, until egg whites develop a golden crust.

On 4 dessert plates divide fruit sauce. Place a pear halve onto the center of each plate, then garnish with a dollop of whipped cream. Serve immediately.
