Schinken Zucchini Strudel   (Ham & Zucchini Strudel)

1 package Puff Pastry or Phylo Dough
1 Rd Pepper, chopped
1 medium-sized Zucchini, chopped
1 large Onion, finely chopped
1 tablespoon Olive Oil
1 Clove Garlic, minced
1/2 lb Ham, chopped
Salt and Pepper
Thyme


Preheat oven to 375°F. Grease a cookie sheet or line cookie sheet with parchment paper.

Sautee onions in the olive oil until onions are transparent. Add garlic, zucchini, red pepper, and ham. Mix together, then season with salt, pepper, and thyme. Remove from heat, and allow mixture to cool slightly.

Thaw and roll-out puff pastry or phylo dough according to the package instructions.

Spread the filling evenly over the dough, leaving about a 1 1/2 inch border from the edges. Fold over the 1 1/2 inch flaps of dough to the right and left of the filling. Roll dough up until all of the dough is completely rolled around the filling. Transfer strudel onto prepare pan. Bake for 30 minutes or until strudel is golden brown.
