Sauerkraut Bier Suppe mit Würstchen
(Sauerkraut Beer Soup with Frankfurters)
 
 
Ingredients
 
5 slices Bacon, cut into small pieces
1 medium Onion, finely chopped
1 clove Garlic, finely chopped
2 medium Potatoes, peeled and cut into small cubes
2 teapoons Brown Sugar
Salt and Pepper
2 cups Hefeweizen Beer
1 can (about 2 1/2 cups) Sauerkraut
3 cups Chicken Broth
1 cup Sour Cream
5 Frankfurters, cut into bite-sized slices
   
 
 
Instructions
 
In a large cooking pot, fry bacon until crispy. Remove bacon and set aside. Add onions and garlic and cook in bacon grease until transparent. Add sugar and allow to caramelize briefly. Add beer and bring to a simmer. Add chicken broth, a href="sauerkraut.cfm">Sauerkraut, and potatoes. Season with salt and pepper. Cover pot with a tight lid and simmer soup for 30-35 minutes or until the potatoes are soft. Remove soup from heat. Mix in sour cream, bacon, and Frankfurters. Taste soup and add more salt and pepper if necessary. Serve hot with some good bread.
