Rheinische Krapfen

5 tablespoons Vegetable Oil
1 cup Water
Pinch of Salt
1 tablespoon Sugar
1 1/4 cup Flour
3 Eggs
1/2 cup Seedless Raisins (optional)
Oil for frying
Powdered Sugar


Bring oil, water, salt, and sugar to a boil. Remove from heat. Mix in flour using a hand mixer and return to the heat. Continue mixing until the dough forms a ball and pulls away from the sides of the pot.

Transfer dough to a clean bowl and immediately mix in 1 egg. Allow dough to cool. Add remaining eggs one-by-one and knead into the dough. Continue kneading until both eggs have been incorporated into the dough. If you choose to include raisins, mix them into the dough.

Heat oil in a large pot or deep-fryer.

Form small round balls out of the dough. Cook each ball in the hot oil until they are golden brown. Remove Krapfen from oil and allow to drip on paper towels. When cool, dust with powdered sugar.
