Obstkuchen Base - Yeast Dough

The is one kind of base that can be used for an Obstkuchen (Fruit topped cake).


1 1/4 cup All-Purpose Flour
1/2 package Active Dry Yeast
2 tablespoons Unsalted Butter, room temperature
1/3 cup Milk, luke warm
2 Eggs
2 tablespoon Sugar
Pinch of Salt


In a small bowl, combine the yeast and the milk. Mix in 2 tablespoons of the flour and 1 teaspoon of the sugar. Allow this mixture to sit in a warm place for 1 hour.
Combine remaining dough ingredients then add in the yeast mixture. Mix until a smooth dough forms, then knead by hand. Allow dough to sit in a warm place until double in volume.
Preheat oven to 350°F (175°C).

Grease a Springform pan.

On a floured work surface, roll out dough until it is the size of the pan. Transfer dough to prepared pan. Gently press dough into pan.
