Dicker Hans Kartoffelpuffer
(Potato Pancakes "Fat Hans")
 
This recipe dates back to 1945.
 
 
Ingredients
 
5 pounds Potatoes
Salt, to taste
2 Eggs
1 medium Onion, finely chopped
8 slices Bacon, cut into pieces
1/2 cup Heavy Cream
3 tablespoons Butter, cut into small pieces
   
 
Instructions
 
Preheat oven to 350°F (180°C)

Wash and peel potatoes. Finely shred potatoes. Add salt, eggs, and onions to potatoes and mix together.

Grease a pan that can go in the oven (alternatively you can use a casserole dish). Spread potato mixture evenly in the pan. Press bacon pieces evenly into the potato mixture. Pour cream over potatoes and place butter pieces evenly on top.

Place pan in oven and bake potatoes for 90 minutes. Serve immediately. Goes well with apple sauce.
