Holiday Spotlight: Christstollen

The Christstollen, or just "Stollen," is a formed cake filled with dried fruits and nuts and covered with powdered sugar. It is Germany's oldest Christmas food tradition, dating back to 1329.  It was first created as a Christmas offering for the Bishop in the city of Naumburg in the region of Thuringia (Thüringen). Although the form of the Stollen remains the same today, the recipe has evolved over the years. The Stollen that we know today has just come about in the last century.

Once it is baked, the Stollen must be stored for at least 3 weeks in a cool, dark place to "ripen". Over time, the dried fruits and rum-soaked raisins absorb moisture, and most importantly their flavors become more intense and are absorbed into the cake.
