Holiday Spotlight: Vanillekipferl
The Vanillekipferl cookie is classic Christmas cookie not just in Germany but in Austria, Switzerland, and the Czech Republic as well. It is a crescent-shaped cookie, shaped by hand, with an intense vanilla flavor. Once baked and still warm, Vanillekipferl are coated in powdered sugar and/or vanilla sugar.
Vanillekipferl are made from a short dough (a dough that is either rolled out or shaped by hand). The base ingredients are butter, flour, sugar, and of course vanillla. Some recipes also call for ground nuts, such as almonds, hazelnuts, or walnuts. Adding nuts to the recipe not only changes the flavor, it also changes the cookie's texture -- nuts keep the cookies moist longer because of their high fat content.
