German Food Guide à la carte - A German Food Blog


The Versatility of Quark: A Refreshing Quark-Mascarpone Dessert!

As I wrote about in the previous post, Quark is a very versatile cheese that can be used in many recipes - savory and sweet.  Today, we're going to show you how to make a quick yet refreshing dessert, which is ideal for hot Summer evenings.  Top it with your favorite in-season fruits for added color and flavor to make it both beautiful and even more delicious.

Here's the recipe:

Quark - Mascarpone Dessert

For the Quark-Mascarpone Part:
• 6 oz (170 g) Plain Quark
• 2 Tbsp Lemon Juice
• 1/2 cup Sugar
• 1 tsp Vanilla Extract
• 1 package Vanilla Sugar
• 4 oz (about 110g) Mascarpone Cream

For the Whipped Cream Part:
• 1/2 cup Whipping Cream
• 1 Tbsp Sugar







First, begin whipping the whipping cream and drizzle in the 1 tbsp sugar. Whip until you get firm peaks. Tranfer to a clean bowl, cover, then refrigerate the whipped cream while you make the Quark-Mascarpone part of the recipe.

Next, using the whipping attachment of your mixer, whip the Quark and Mascarpone until it appears combined and smooth.  Whip in the sugar and Vanilla Sugar. Finally, whip in the lemon juice and vanilla sugar.

Fold the whipped cream into the Quark-Mascarpone mixture until it is completely incorporated. Place equal portions of the dessert mixutre into dessert glasses. Optionally, top with your favorite cut-up fruits. You can also get creative by adding granola or cookie pieces as toppings.

In this photo, I simply topped my dessert with strawberries.  I cut the strawberries and sprinkled them a bit with sugar.  I allowed the strawberries to sit for a bout 30 minutes to draw out their juices.  Then, when I topped the dessert, I had a little strawberry sauce to go along with the strawberries.

I hope you enjoy this dessert as much as I do!  I think it's better than ice cream.

Hello Julia! I'm so glad to hear that you liked the dessert. To answer your question ... absolutely you could replace the mascarpone with cream cheese. It changes the taste slightly - it will taste a bit like cheese cake, but still delicious! You could even use a light cream cheese if you wanted to save a few calories.
